See this blog post by Terry Tao for a lot of good resources on writing math. I particularly like Serre's lecture on "How to write mathematics badly". Serre is renowned for his quality of writing, so he's a great person to learn from. These are focused more towards people writing papers, but there's plenty to get from these in general. Also useful is another blogpost by Terry Tao on the virtue of using language in mathematical writing.
Here's another good blogpost by Terry Tao where he discusses the changing importance of rigor in a mathematical career.
I also really like Bill Thurston's article On proof and progress in mathematics. Thurston was a pioneering figure in low dimensional topology. You may be familiar with his work on turning spheres inside out. Here's the website for this video, including source code which is here.
